Oh fall…the weather turns chilly and life gets busy again and all my family wants to eat are warm, comforting, quick & easy meals. I make a different kind of soup almost every week these days (like this soup, or that soup) because they’re such a great way to eat vegetables and they’re perfect for reheating for a couple days after they’re made. And they’re a good choice for lunch or for dinner. My friend Steph from Running Toward The Harvest shared this Easy Mexican Tortilla Soup recipe with me and after one bite I was hooked! This recipe is now one of our favourites, mostly because it is so easy to make and it tastes so great! And it’s easy to customize it with everybody’s favourite toppings. It’s a quick and easy meal that the whole family will love!
This recipe is originally adapted from the Happy Herbivore’s Salsa Soup.
2 cups of your favourite fat-free salsa (mild, medium, hot…whatever you like!)
1 1/2 cups fat-free vegetable stock
1 cup frozen corn
1 cup black beans
tortilla chips or strips of fresh tortilla
sour cream or plain Greek yogurt
fresh diced tomatoes
fresh chopped cilantro
and anything else you’d like!
Add 1 cup of the salsa and 1/2 cup of the black beans to your blender and blend on high until completely smooth.
Add the vegetable stock, corn and remaining salsa and black beans to a medium pot over medium high heat. Add the blended mixture to the pot and stir to combine.
While the soup heats up, prepare your toppings: chop your tomato and avocado, shred some cheese, chop some cilantro, etc.
One the soup begins to boil, turn the heat down to low and let it simmer for 3-5 minutes, stirring every minute or so.
Pour the soup into bowls, top with your favourite toppings, and serve!
This is a fantastic Weight Watchers-friendly recipe at only 2 PointsPlus per serving before toppings (the recipe makes 4 total servings)! Be sure to calculate the PointsPlus values of any toppings you add to make sure you’re staying on track!
