I am so excited to share this recipe with you today! When Matt & Steve’s (makers of The Extreme Bean) sent me their latest products for review I couldn’t wait to try them out and get creative! Everyone needs a few delicious appetizer recipes for game days, holiday parties and other gatherings and I knew I could come up with a delicious savory snack featuring Matt & Steve’s pickled green beans. Reuben sandwiches are a long-time favourite of mine, especially when they’re homemade. As soon as I tasted Matt & Steve’s The Extreme Bean in their Garlic & Dill flavour I knew they’d be the perfect ingredient to take a Reuben sandwich to the next level. These Mini Reuben Sandwich Appetizers feature all the traditional flavours with a twist! I know you’re going to love them!

1/2 baguette cut into 16 thin slices
1/3 cup low fat Thousand Island salad dressing
150 gm shaved lean corned beef
1/3 cup sauerkraut
1 500 ml jar of Matt & Steve’s The Extreme Bean, garlic and dill flavour
8 slices of Swiss cheese (I use reduced fat cheese)
a few short sprays of canola or olive oil for greasing the baking sheet (I use my Misto Oil Sprayer
for this job!)
Preheat your oven to 375 degrees Fahrenheit. Prepare a baking sheet by giving it a quick spray with the oil of your choice. This will keep the bottom of the baguette slices nice and crispy, so don’t skip this step!
Arrange the 16 baguette slices on the baking sheet and spread 1 tsp of the Thousand Island dressing over each of the slices. Add a small portion of the corned beef to each and top each with 1 tsp of sauerkraut.
Crack open that jar of Matt & Steve’s The Extreme Bean Garlic and Dill pickled beans and cut each bean in half, placing two halves onto each mini sandwich.
Add half a slice of Swiss cheese to the very top of each mini sandwich and bake at 375 degrees Fahrenheit for about 12-15 minutes. Once the cheese has melted, turn on the broiler for about 1 minute until the cheese begins to bubble (watch them carefully!!) and remove them immediately.
Add them to a serving tray while they’re still piping hot and serve them with Caesars rimmed with Matt & Steve’s Caesar Rimmer and Matt & Steve’s Pickled Green Bean-Stuffed B’nOlives!
Don’t they look delicious??!? And since The Extreme Bean comes in 3 flavours you can set aside the Garlic & Dill and kick up the heat by adding their Hot & Spicy beans or create a sweet and salty vibe with their Sweet & Savoury. It’s up to you!
And if you love a virgin Caesar as much as I do (or one with alcohol if you prefer!) you will love their Caesar rimmer! It’s delicious!
And maybe the best part about this recipe is that each of these Mini Reuben Sandwiches is only 2 Weight Watchers PointsPlus if you make them with lean corned beef, and reduced fat cheese and dressing! They’re not only delicious, but they’re a great fresh appetizer to reach for at your next party!
