Easy Tomato Salad

This Quick and Easy Tomato Salad is a classic easy salad recipe that's packed with ripe tomatoes, onions and fresh basil. It's the perfect simple side dish!

Ingredients

  • 2.5 pounds fresh cherry or grape tomatoes (about 1.1 Kilograms)
  • 3 small sweet onions sliced
  • 10 large basil leaves sliced into ribbons
  • 2 tablespoons olive oil
  • 1 1/2 tablespoons red wine vinegar
  • 2 garlic cloves crushed, optional
  • salt and pepper to taste

Instructions

  • Slice the tomatoes in half and place them in a bowl.
  • Add the sliced onions, basil, olive oil, vinegar and garlic (optional). Add a pinch or two each of sea salt and black pepper.
  • Toss well and add more salt and pepper if desired.

Notes

This salad is best served fresh, but it can be made up to one day in advance (add the olive oil, vinegar, salt and pepper right before serving).
