Ingredients

  • 1 cup rolled oats
  • 1 1/2 cup whole wheat flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 1/4 teaspoon ginger
  • 1/4 teaspoon salt
  • 3 eggs
  • 1/3 cup liquid honey or substitute maple syrup if desired
  • 1/4 cup vegetable oil or substitute melted coconut oil if desired
  • 1 cup shredded carrots
  • 3/4 cup chopped nuts or dried fruit OPTIONAL (we like to add chopped walnuts or dried cranberries)

Instructions

  • Preheat your oven to 350 degrees Fahrenheit and prepare a large baking sheet by lining it with parchment paper.
  • Mix the dry ingredients together in a bowl with a fork or a whisk.
  • Add the eggs, oil and honey to a liquid measuring cup and whisk with a fork to combine.
  • Pour the liquid ingredients into the dry ingredients and add the shredded carrots and any chopped nuts or dried fruit.
  • Combine everything together and drop by the tablespoon onto a parchment-lined baking sheet. Bake for 16-18 minutes at 350 degrees Fahrenheit.
  • Let cool, and then enjoy!

Notes

These cookies keep well in an airtight container for up to 4 days at room temperature. They freeze well, and keep in an airtight container in the freezer for up to 1 month.
