Ingredients

  • 2 liters boiling water (about 8 cups)
  • 3 or 4 black tea bags
  • 2/3 cup water
  • 2/3 cup sugar
  • 3 ripe peaches cut into slices

Instructions

For the tea:

  • To a large heat-safe pitcher, add the black tea bags and the boiling water. Let the tea steep for 10 minutes or so, then remove the tea bags and let the tea cool.
  • Slice two of the peaches and add them to the warm tea. Let them sit in the tea as it cools.

For the simple syrup:

  • While the tea cools, add the water and sugar to a small pot over high heat on the stove.
  • Let the water and sugar heat up until the sugar completely dissolves in the water. Stir once or twice, if necessary.
  • Remove the water and sugar mixture from the heat and set it aside to cool.
  • While the syrup is hot, add one of the peaches, sliced, and let the syrup absorb the flavour of the peach as it cools.
  • After the tea has cooled and the syrup has also cooled (this will take about one hour), remove the peach slices from the syrup and discard them.
  • Pour the syrup into the tea and stir well to combine.
  • Pour the sweetened tea over ice and serve.
