Roasted Zucchini and Squash
This Roasted Zucchini and Squash recipe is the perfect healthy side dish! Fresh zucchini & summer squash - easy to make and delicious!

Preheat your oven to 400 degrees Fahrenheit.
Chop the veggies and add them to a bowl, tossing them with the salt. Let sit for about 5 minutes.
Drain any water the veggies have released and pour them into a large baking dish (approximately 9-inch by 13-inch or comparable size).
Drizzle the olive oil on top of the veggies, and add the Italian seasoning, garlic powder and onion powder. Toss very well in the pan.
Roast in the oven at 400 degrees Fahrenheit for about 13-15 minutes until the veggies are soft slightly caramelized.
Add some chopped fresh dill on top, and serve.
