In a large pan over medium-low heat, heat up the sesame oil and vegetable oil.
Add the garlic, ginger and green onions and sauté until fragrant.
While the onions are softening, place the dry noodles in a bowl and pour boiling water over them until they're submerged. Let the noodles sit in the hot water to soften (follow the package directions for best results - most noodles take about 3-4 minutes).
Add the brown sugar and the soy sauce to the onions in the pan and mix to form a sauce. Cook until the sauce starts to thicken slightly.
Strain the noodles and add them to the pan with the sauce. Toss the noodles in the sauce until coated.
Serve hot with green onions and sesame seeds. These noodles can be eaten by themselves or enjoyed as a side dish.
