Slice the chicken thinly (½ -inch wide slices). In a bowl add the spices and the lime juice and zest to the chicken, mix well and set aside.
Preheat your Air Fryer to 400 F (200 C) while you get everything else ready.
Slice the onion and thinly slice the bell peppers. You want all your veggies to be cut to roughly the same size and thickness. Add the spices and the lime juice and zest to a bowl with the veggies and mix well.
Spray the bottom of the air fryer with cooking spray and add your veggies. Air fry at 400 degrees Fahrenheit (200 degrees Celsius) for 8 minutes, shaking the basket/tray halfway through. Be careful not to overcrowd the veggies, so you may need to air fry them in two batches.
Add the chicken slices on top of your veggies and spray them with a bit of cooking spray. Air Fry for 5 more minutes or until the internal temperature of the chicken is 74 degrees Celsius. You may need to do this in batches, depending on the size of your air fryer, to avoid over crowding.
Remove the chicken and veggies to a serving platter.
Serve with tortillas, shredded lettuce, tomatoes, shredded cheese, sour cream, and avocado.
