Scrub the skins of your potatoes very well as you're not going to peel them for this recipe.
Preheat your Air Fryer to 200 ℃ (400℉) while you get everything else ready.
Cut the potatoes into small pieces (about one inch thick) and add to a mixing bowl.
Add the olive oil, salt, pepper, Italian seasoning and garlic powder and toss very well to coat.
Add the potatoes to the air fryer. Avoid overcrowding them and place them in the air fryer in a single layer. Depending on the size of your air fryer, you may have to cook the potatoes in two batches to avoid overcrowding.
Air fry for 12-15 minutes, shaking the basket halfway through cooking.
Serve immediately when the potatoes are fork tender, crispy on the outside, and cooked through.
