Ingredients

  • 1-2 tablespoons olive oil
  • 4 boneless skinless chicken breasts
  • 2-3 tablespoons cajun seasoning blend (link to recipe in instructions below)

Instructions

  • Heat your grill or a large cast iron pan over medium high heat. If using a pan, add the olive oil.
  • Pound the chicken breasts with the flat side of a meat tenderizer just in the middle of the breasts to create an even thickness.
  • Rub the cajun seasoning (GET the easy recipe for Cajun Seasoning HERE) over all sides of the chicken breasts until well coated.
  • Add the chicken breasts to the grill or hot pan and cook on the first side for about 5-7 minutes. Flip and cook on the other side until cooked through to an internal temperature of 74 degrees Celsius (or 165 Fahrenheit).
