tablespoon
olive oil
2
tablespoons
unsalted butter
or vegan butter
4
cloves
garlic
minced
2 sprigs of fresh thyme, leaves only
plus more for garnish, if desired

jumbo white mushrooms
cut in half
sea salt and black pepper

Instructions
Preheat your oven to 375 degrees Fahrenheit.
Heat a large cast-iron skillet over medium-high heat and add the olive oil.
Add the butter and let it melt.
Add the garlic and thyme leaves and cook just until fragrant.
Add the mushrooms and salt and pepper, and toss well to coat the mushrooms in the garlic butter mixture.
Place the skillet in the oven and roast for about 25-30 minutes until the mushrooms have browned. Toss once in the middle of roasting, if necessary.
Notes
For best results, serve immediately.
