Garlic Butter Roasted Mushrooms

These Garlic Butter Roasted Mushrooms are the perfect side dish to serve with grilled meat! Flavoured with real butter, fresh garlic & thyme!

Ingredients

  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter or vegan butter
  • 4 cloves garlic minced
  • 2 sprigs of fresh thyme, leaves only plus more for garnish, if desired
  • 20 jumbo white mushrooms cut in half
  • sea salt and black pepper

Instructions

  • Preheat your oven to 375 degrees Fahrenheit.
  • Heat a large cast-iron skillet over medium-high heat and add the olive oil.
  • Add the butter and let it melt.
  • Add the garlic and thyme leaves and cook just until fragrant.
  • Add the mushrooms and salt and pepper, and toss well to coat the mushrooms in the garlic butter mixture.
  • Place the skillet in the oven and roast for about 25-30 minutes until the mushrooms have browned. Toss once in the middle of roasting, if necessary.

Notes

For best results, serve immediately.
