Season the chicken pieces with salt and pepper on both sides. Place in a roasting pan on a rack (if you have one).
In a small bowl, whisk together the mustard, garlic, maple syrup and brown sugar. Drizzle about half this mixture over the seasoned chicken pieces and reserve half for later.
Roast the chicken for about 40-45 minutes at 350 degrees Fahrenheit.
After 40-45 minutes, remove the chicken from the oven and brush on the remaining mustard mixture.
Roast for an additional 5 minutes, then remove from the oven and rest for 5 minutes.
Serve alongside your favourite easy side dishes or a salad.
