These Best Ever Peanut Butter Cookies are the perfect classic cookie recipe! Crispy on the outside, tender on the inside, and packed with nutty flavour!
Add the butter and sugar to the bowl of your stand mixer (or in a large mixing bowl if you're using a hand mixer) and mix on medium-high speed until the mixture is creamy and fluffy.
Mix in the peanut butter on medium high speed until the mixture is smooth.
Add the eggs and mix until combined.
Add the flour, baking soda and salt, and mix on low just until combined and no flour streaks remain.
Add the Reese's Pieces and mix by hand until combined.
Line a cookie sheet with parchment paper (or two, of you want to bake 2 pans at once) and drop about 1-2 tablespoon-sized balls evenly spaced on the cookie sheet. Be sure to leave lots of room between the balls of dough as these cookies spread a little bit.
Bake for about 9-12 minutes or until the top of the cookies have just lost their shine.
Remove from the oven and let cool on the cookie sheet for about 15 minutes before moving to a cooling rack to cool completely.
