Ingredients

  • 250 gram Brie cheese
  • 1 1/2 cups fresh cranberries halved
  • 1/2 pomegranate seeded
  • 3 tablespoons maple syrup
  • zest and juice of one orange
  • 1/4 cup pecans chopped
  • fresh rosemary for garnish optional
  • your favourite crackers or baguette slices for serving, or veggies

Instructions

  • Preheat your oven to 300 degrees Fahrenheit and grease a small baking dish with a small amount of butter or cooking spray.
  • Place the brie cheese into the baking dish, in the middle.
  • In a small bowl, combine the sliced cranberries, pomegranate seeds, maple syrup, orange juice and zest, and the chopped pecans.
  • Toss everything together in the bowl and spoon it on top of the brie. It's ok if some of it falls off the top.
  • Bake at 300 degrees for about 15-17 minutes, or until the brie is very soft but still intact. Check it after 10 minutes to be sure you don't over-bake it.

Notes

It's possible to make this Brie ahead of time. Simply prepare the pan, the cheese and the topping, assemble and store covered in the refrigerator. Bake just before serving.
