Ingredients

  • 4 cups arugula
  • 4 cups fresh spinach
  • 2 cups halved cherry tomatoes
  • 1/4 cup Classic Creamy Italian Dressing (recipe linked below) OR your favourite Italian-style salad dressing
  • 1/2 cup mixed pitted olives
  • 1/3 cup canned artichoke hearts chopped
  • 1/4 cup roasted red peppers sliced
  • 6 slices prosciutto chopped
  • 8 slices pepperoni or dried chorizo sausage, chopped
  • 1/2 cup fresh mozzarella balls or sliced fresh mozzarella
  • 1/4 cup shaved parmesan cheese
  • 1 tablespoon basil leaves chopped
  • balsamic vinegar for drizzling

Instructions

  • Add the spinach and arugula to a large platter or salad bowl.
  • Add the cherry tomatoes on top and drizzle the Classic Creamy Italian Salad Dressing (click HERE for the recipe) over everything. Toss well.
  • Add the olives, artichoke hearts, roasted peppers, prosciutto, pepperoni, mozzarella, parmesan, and basil leaves on the top of the salad (toss gently if necessary).
  • Drizzle a tablespoon or two of balsamic vinegar over the top and serve.
