  • 8 chicken drumsticks
  • 6 medium potatoes cut into 1-inch chunks
  • 3 tablespoons olive oil
  • juice of one lemon
  • 2 teaspoons lemon pepper seasoning
  • 3 cloves garlic finely minced
  • 2 pinches sea salt
  • 2 cups frozen green beans
  • lemon slices and freshly chopped parsley for serving (optional)


  • Preheat your oven to 400 degrees Fahrenheit.
  • Add the chicken drumsticks and potatoes to a large sheet pan, baking sheet or baking dish.
  • Drizzle the olive oil and lemon juice over the chicken and potatoes.
  • Sprinkle the lemon pepper seasoning, minced garlic and sea salt over the chicken and potatoes.
  • Toss everything together well so the chicken and potatoes are well coated in the oil and spices.
  • Move the chicken and potatoes to one side of the pan, leaving room for the green beans (to be added later).
  • Bake for about 15 minutes at 400 degrees Fahrenheit. After 15 minutes, remove the pan from the oven and add the green beans.
  • Add the pan back to the oven and bake for another 7-10 minutes, or until the chicken is golden brown and reaches an internal temperature of 74 degrees Celsius (165 Fahrenheit), and the potatoes are fork tender.
  • Add some freshly chopped parsley and some lemon slices (optional) for serving.
