For the coleslaw:

  • 4 cups sliced cabbage (or pre-sliced coleslaw mix)
  • 1 cup carrots cut julienne
  • 1 cup sliced apple
  • 3/4 cup cranberries halved
  • 1 cup chopped pecans (or use 1/2 cup chopped pecans and 1/2 cup sliced almonds)

For the dressing:

  • 1/3 cup maple syrup
  • 2 tablespoons balsamic vinegar
  • 1/4 teaspoon fresh grated ginger (or use a pinch or two of powdered ginger)
  • salt and pepper, to taste

  • Add the sliced cabbage, carrots, apple, cranberries and nuts to a large bowl.
  • Pour the maple syrup, balsamic vinegar, ginger and salt and pepper into a mason jar or salad dressing shaker (affiliate link) and shake well to combine.
  • Pour the dressing over the salad, toss well, and serve.

To make this salad ahead of time, simply mix the salad ingredients together and mix the dressing separately, reserving it and dressing the salad when ready to serve.
