  • 30 ounces chickpeas rinsed and drained (two 15 oz. cans)
  • 1/2 pound cherry tomatoes halved
  • 1 large red onion chopped
  • 2 long english cucumbers chopped
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 2 teaspoons fresh basil chopped (or use 1 teaspoon dried basil)
  • 1 teaspoon fresh oregano chopped (or use 1/2 teaspoon dried oregano)
  • salt and pepper (to taste)
  • 1/2 cup feta cheese crumbled


  • Add the chickpeas, halved cherry tomatoes, chopped red onion, and chopped cucumbers to a large bowl.
  • Drizzle the olive oil and red wine vinegar over the veggies in the bowl, along with the basil and oregano and a pinch or two each of salt and pepper.
  • Toss everything together very well until combined.
  • Top with the crumbled feta cheese and serve.


This salad is great for meal prep. To make it ahead of time, simple prepare as directed and store in airtight containers in the fridge for up to 3 days.
