  • Preheat your oven to 400 degrees Fahrenheit.
  • Chop the veggies and add them to a bowl, tossing them with the salt. Let sit for about 5 minutes.
  • Drain any water the veggies have released and pour them into a large baking dish (approximately 9-inch by 13-inch or comparable size).
  • Drizzle the olive oil on top of the veggies, and add the Italian seasoning, garlic powder and onion powder. Toss very well in the pan.
  • Roast in the oven at 400 degrees Fahrenheit for about 13-15 minutes until the veggies are soft slightly caramelized.
  • Add some chopped fresh dill on top, and serve.
