This Salad with Fruits recipe is beautifully fresh and colourful - sweet fruit and berries, mixed greens, goat cheese and a simple lemon poppyseed dressing!

For the dressing:

For the salad:

  • 8 cups mixed greens
  • 1 mango chopped
  • 1/2 cup blueberries
  • 1/2 cup strawberries chopped
  • 1/2 cup blackberries
  • 2 kiwis peeled and sliced or chopped
  • 1 cucumber chopped
  • 1/3 cup goat cheese crumbled

Instructions

  • Combine all the ingredients for the dressing in a mason jar or salad dressing shaker. Shake or whisk well to combine. Set aside.
  • Add the greens to a bowl and top with the fruits and the crumbled goat cheese.
  • Right before serving, pour the dressing over the salad and toss well.

Notes

Feel free to add chopped pecans or chopped pistachios to this salad - both taste great with this flavour combination!
