Best Ever Slow Cooker Chicken Noodle Soup

This Best Ever Slow Cooker Chicken Noodle Soup is healthy, wholesome, packed with veggies and lean chicken, and it's so easy to make in the Crock Pot or slow cooker!! It's the perfect soup for sick days and snow days!

Ingredients

  • 1 1/2 cups cooked chicken (cut into bite-sized pieces)
  • 1 large onion, diced
  • 1 cup chopped carrots (approximately 2 large carrots)
  • 1/2 teaspoon dried basil
  • 1 teaspoon dried parsley
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • salt and pepper, to taste
  • 2 teaspoons tomato paste
  • 2 liters low sodium chicken stock (8 cups)
  • 1 1/2 cups dried pasta (rotini or fusilli work well)
  • green onions for garnish

Instructions

  • Add the chicken, onion, carrots, basil, parsley, oregano, thyme, salt and pepper, tomato paste, and chicken stock to your slow cooker.
  • Stir well, cover and cook on high for 2 hours or on low for 3 1/2 to 4 hours. 
  • Uncover, stir well and add the pasta.
  • Replace the lid and cook for 15-25 minutes more, just until the pasta is al dente.
  • Ladle into bowls and garnish with sliced green onions before serving.
