One Pan Mexican Style Sloppy Joes

Ingredients

  • 1 1/2 pounds lean ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced or pressed
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1 cup frozen or canned corn
  • 1 cup canned black beans
  • 2 tablespoon taco seasoning
  • 2 1/2 cups tomato sauce
  • 2 tablespoons water
  • 1 tablespoon cornstarch
  • Fixings: salsa, sour cream, lettuce, tomatoes, avocados, and/or cheese.

Instructions

  • Heat a large non-stick skillet over medium-high heat.
  • Brown the ground beef in the pan, adding the onions and garlic about half way through cooking.
  • Add the bell peppers, corn and black beans and stir to combine.
  • Stir in the taco seasoning.
  • Reduce the heat to medium-low and add the tomato sauce. Mix the water and cornstarch in a small bowl and add that mixture too.
  • Stir well to combine, cover and simmer for 15-20 minutes.
  • Serve on hamburger-style buns with salsa, sour cream, lettuce, tomatoes, avocados, and cheese.

This recipe is also great for meal prep! Just make the filling ahead of time, store in the fridge for up to 3 days and reheat to serve as directed.
