For the dipping sauce:

  • 1/4 cup mayonnaise I use reduced fat
  • 3 tbsp whole milk
  • 1/2 cup fat free Greek yogurt
  • 2 dashes Worcestershire sauce
  • 1/2 cup crumbled blue cheese
  • a pinch or two of salt and pepper

For the roasted cauliflower:

Blue Cheese Dipping Sauce:

  • Combine the mayo, whole milk, Greek yogurt, Worcestershire sauce, blue cheese, and salt and pepper in a medium bowl and whisk until it's well combined and smooth (except for the blue cheese chunks, of course). Refrigerate the dipping sauce while you prepare and roast the cauliflower, although the dipping sauce can even be made a day ahead of time to give the flavours a chance to develop further.

Buffalo Roasted Cauliflower:

  • Preheat your oven to 425 degrees Fahrenheit and line a large baking sheet with a silicone baking mat or parchment paper.
  • Add the olive oil, lemon juice, hot sauce, garlic powder, salt and paprika to a large bowl and stir to combine.
  • Add the chunks of cauliflower to the bowl and toss it in the sauce until it's well coated. Turn the cauliflower out onto the parchment-lined baking sheet and bake at 425 degrees Fahrenheit for about 15-18 minutes or until the tops of the cauliflower chunks begin to brown slightly.

Serve the cauliflower while it's hot with the blue cheese dipping sauce and some celery sticks!
