One-Pot Pepperoni Mushroom Pizza Pasta

Ingredients

  • 450 g Rotini pasta
  • 4 cups vegetable broth
  • 398 ml pizza sauce I use a low-sodium, low- fat variety
  • 2 cups sliced mushrooms
  • 2 green bell peppers cut into chunks
  • 5 mild pepperoni sticks thinly sliced
  • 1 1/2 cups shredded mozzarella cheese
  • Chopped cilantro or parsley for garnish optional

Instructions

  • Add the pasta, the broth and about half the pizza sauce to a large skillet or saucepan over high heat and bring to a boil.
  • Once the liquid begins to boil turn the heat to medium low and let the pasta cook, uncovered, until it's al dente and much of the liquid has been absorbed, about 10 minutes.
  • At this point, add the sliced mushrooms, green bell pepper chunks, sliced pepperoni, the shredded cheese, and the remainder of the pizza sauce. Stir everything together well and let the pasta absorb the last little bit of liquid while the peppers and mushrooms soften slightly and the cheese melts into the sauce.
  • Serve immediately and enjoy!
