Ingredients

For the salad:

  • 8 cups fresh baby spinach
  • 10 small white button mushrooms sliced thinly
  • 1/3 cup dried cranberries use more if desired
  • 1/3 cup pecans whole or chopped

For the dressing:

Instructions

  • Add the spinach, sliced mushrooms, cranberries and pecans to a large salad bowl.
  • In a small bowl, whisk together the mayonnaise, sugar, vinegar and lemon juice until well combined.
  • Drizzle the dressing over the salad, toss well, and serve.
