Ingredients

For the Lemon Poppyseed Dressing:

For the salad:

  • 8 cups fresh baby spinach
  • 3 cups strawberries halved
  • 1/4 cup pecans
  • 1/4 cup goat cheese crumbled

Instructions

  • Combine all the dressing ingredients in a mason jar and make sure the lid is on tight.
  • Shake very well until everything is combined and a creamy dressing forms. Set aside.
  • Add the spinach to a large salad bowl or platter. Top with the halved (or sliced) strawberries, pecans and goat cheese.
  • Shake the dressing well again and pour the dressing over the salad just before serving.

Notes

To make this salad ahead of time, simply reserve the dressing in a jar in the fridge along with the salad (in an airtight container) until ready to serve.
