Delicious salads are my jam and I enjoy one almost daily – they’re packed with greens and tons of other healthy ingredients and they’re SO flavourful! This recipe for Strawberry Spinach Salad with Lemon Poppy Seed Dressing makes one of my favourite healthy, low carb salads of all time!

Strawberry Spinach Salad with Lemon Poppy Seed Dressing
This Strawberry Spinach Salad with Lemon Poppy Seed Dressing is the perfect fresh & healthy salad for spring & summer - with pecans & goat cheese!

Recipe: Ingredients
For the Lemon Poppyseed Dressing:
- 2 tablespoons vegetable oil (or olive oil)
- 1 tablespoon apple cider vinegar
- 1 tablespoon lemon juice
- 2 tablespoons honey
- 1 teaspoon dijon mustard
- 1/2 teaspoon poppy seeds
- a pinch of salt
For the salad:
- 8 cups fresh baby spinach
- 3 cups strawberries halved
- 1/4 cup pecans
- 1/4 cup goat cheese crumbled
Recipe: Instructions
- Combine all the dressing ingredients in a mason jar and make sure the lid is on tight.
- Shake very well until everything is combined and a creamy dressing forms. Set aside.
- Add the spinach to a large salad bowl or platter. Top with the halved (or sliced) strawberries, pecans and goat cheese.
- Shake the dressing well again and pour the dressing over the salad just before serving.
Recipe: Notes
To make this salad ahead of time, simply reserve the dressing in a jar in the fridge along with the salad (in an airtight container) until ready to serve.
