Believe it or not, I’ve had this healthy Winter Citrus Salad recipe in my head for about 2 years. I just love the flavour of citrus fruit, and especially on salads with fruits like oranges and grapefruits; it is just divine! I love enjoying healthy salads in the winter time (it’s cold and flu season, after all!) and this spinach arugula salad just hits the spot!
I also like to serve side salads like this one for holiday meals! This salad makes a statement on any holiday table and it’s quick and easy enough to make that it’s definitely not going to add stress to your life. I make a large batch to take to potlucks and gatherings, and I also make it at home just for my family. It’s perfect alongside roast turkey, chicken or pork tenderloion for a weeknight meal.

Best dressing for spinach arugula salad
I serve this salad with a simple homemade maple balsamic dressing that’s easy to make in about 2 minutes. J ust combine all the ingredients in a bowl or mason jar, whisk together or shake in the jar, and drizzle it over the salad. It’s that easy!

Healthy Winter Citrus Spinach Arugula Salad
Recipe: Ingredients
For the salad:
- 3 small red onions
- 1 tablespoon olive oil
- 4 cups arugula
- 4 cups baby spinach
- 2 oranges peeled and sectioned
- 1 large grapefruit peeled and sectioned
- 1/3 cup whole pecans
- 1/3 cup goat cheese crumbled
For the dressing:
- 3 tablespoons real maple syrup
- 2 tablespoons balsamic vinegar
- 1 tablespoon olive oil
- 1 teaspoon dijon mustard
- 2 pinches sea salt
- 1 pinch black pepper
Recipe: Instructions
For the salad:
- Preheat your oven to 400 degrees Fahrenheit.
- Slice the red onions in quarters (remove the skin) and drizzle with the olive oil.
- Place cut side up in a small baking dish and roast at 400 degrees Fahrenheit for about 20 minutes or until wilted and slightly caramelized.
- Remove the onions from the oven and set aside.
- In a large bowl or on a large platter, arrange the arugula, spinach, orange and grapefruit slices (be sure to peel and section the fruit, removing any seeds), the pecans and the goat cheese.
- Top with the roasted onions.
For the dressing:
- Whisk together all the ingredients for the dressing (or shake together in a mason jar) and pour over the salad just before serving.
