Egg Bites

This Egg Bites recipe is the perfect easy make-ahead breakfast - even better than Starbucks egg bites & a healthy, low-carb meal prep recipe!

Ingredients

  • 10 large eggs at room temperature
  • 1/2 cup plain full fat Greek yogurt at room temperature
  • 3/4 cup shredded Gruyere cheese or use Emmental or Swiss cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/3 cup crumbled bacon approximately 6 slices, cooked and crumbled

Instructions

  • Preheat your oven to 325 degrees Fahrenheit and spray a non-stick muffin pan with cooking spray.
  • In a mixing bowl combine the eggs and the Greek yogurt, along with the salt and pepper with a hand-held immersion blender until very smooth. If you don't have an immersion blender, simply use a regular blender on medium speed and blend until smooth and combined.
  • Stir in the shredded cheese and crumbled bacon by hand, reserving about a tablespoon of the crumbled bacon to place on top of the bites before baking.
  • Pour the egg mixture into the prepared muffin tin, dividing the mixture evenly between the 12 muffin cups.
  • Add the last bit of the bacon on top.
  • Bake at 325 degrees Fahrenheit for about 15-17 minutes or until the centres of the egg bites almost stop jiggling when you gently shake the pan. It's ok to remove them from the oven if the centres have the slightest jiggle when the pan is moved.
  • Once you remove them from the oven, let them cool completely in their pan before removing and storing in an airtight container in the fridge.
  • If you plan to enjoy them immediately, let them rest in the pan for at least 10 minutes before enjoying them warm.

Baking Tips

Because ovens vary in temperature, be sure to test your oven temperature to be sure it doesn't run hotter or colder than 325 degrees Fahrenheit. You may need to add a minute or two of baking time depending on your oven's exact temperature, the size of the eggs you're using, and the temperature of the ingredients.

Storage Instructions

Store in an airtight container in the fridge for up to 4 days after baking. 

Reheating Instructions

To reheat them after storing in the fridge, reheat in the microwave on about 90% power for 45 seconds to one minute until heated through.

Freezing Instructions

Simply freeze them with a layer of parchment paper between them to prevent them from sticking together. Egg bites can be frozen in an airtight container for up to 3 months. Reheat from frozen in the microwave for about 1 minute and 30 seconds on about 75% power.
