Lemon Blueberry Oat Bread

Ingredients

  • 2 cups all purpose flour
  • 1 cup rolles oats
  • 1 cup white sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • zest of 2 lemons
  • 1 cup fresh blueberries
  • 3/4 cup milk
  • 1/2 cup vegetable oil
  • 2 eggs

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit and prepare a standard loaf pan by greasing it well with butter and lining with parchment paper.

  2. Whisk together the all purpose flour, oats, sugar, baking powder, baking soda, salt and lemon zest. 

  3. Add the blueberries and toss to coat.

  4. In a glass liquid measuring cup or small bowl combine the milk, oil, and eggs, mixing with a fork to combine.

  5. Pour the wet ingredients into the dry ingredients and fold together with a rubber spatula just until combined.

  6. Pour into the prepared loaf pan and bake at 350 degrees Fahrenheit for 50-55 minutes, or until a toothpick inserted into the middle of the loaf comes out clean.

  7. Let cool in the pan for 5 minutes and then remove to a wire rack to cool almost completely before slicing and serving.

Recipe Notes

To use frozen blueberries in this recipe, simply replace the fresh blueberries with frozen ones making sure to coat them in the flour mixture very, very well. This will prevent them from colouring the batter purple and will also prevent them from sinking to the bottom of the loaf while baking.
