This Burrito Bowl recipe is a simple, healthy meal that's quick and easy to make and great for meal prep. Make a beef or chicken burrito bowl in minutes for an easy weeknight dinner!
In a large skillet, over medium high heat, add the olive oil and heat it up.
Once hot, add the beef and the spices, break it up and mix well.
Brown the beef and set it to a side on a plate. Remove most of the fat. You'll need a couple of teaspoons for the peppers.
For the peppers:
Wash and cut the bell peppers in this wedges.
In the same pan you browned the beef in, warm up the leftover beef fat (about 2 teaspoons) and add the peppers and spices over high heat. Sauté until the peppers soften and get a bit of colour.
For the toppings:
Cook your cilantro lime rice or plain rice.
Drain and rinse your black beans.
Drain and rinse or defrost your corn.
Optionally warm up your corn and beans in the same pan you used to cook the beef and peppers in.
Chop up the cilantro for garnish and slice some limes to serve with your bowls.
Cut your avocado in cubes.
For assembling the bowls:
In each bowl add 3/4 cup Cilantro Lime Rice (or plain rice), 1/4 cup black beans, 1/4 cup corn, a quarter of the avocado, about 2/3 cups of beef, and a quarter of the peppers.
Top with chopped cilantro, chunky salsa, sour cream, and pickled red onions and serve with lime wedges.

This recipe makes 4 meal prep lunches or dinners, or serves 4 people at one meal.To save even more time, double the beef and the pepper recipe and cook 2 pounds of beef and 6 peppers, freezing half ahead of time for future meal prep lunches or dinners.
Storage Instructions
Store these bowls separate from the toppings in an airtight container in the fridge for 3-5 days. Warm up in the microwave or a skillet and add the toppings on top when ready to eat. You can freeze the cooked beef and peppers in an freezer safe container for up to 3 months if protected well from freezer burn.
