In an large airtight container, add the water and the salt and mix or shake to dissolve.
Wash and slice the zucchini in 1 cm thick slices. Add them to the container and let them sit in the brine for 20 minutes.
Heat up your grill or grill pan to medium-high heat.
Once your zucchini slices have soaked in the brine for 20 minutes, remove them from the container and pat dry with paper towels. Add the garlic powder and black pepper on both sides.
Brush some olive oil on your grill or grill pan and grill the zucchini slices for 2-3 minutes on both sides.
Place the zucchini slices on a plate and crumble some feta cheese over top. Serve warm.
