Preheat your oven to 350 degrees Fahrenheit and prepare a large baking sheet by lining it with parchment paper.
Mix the dry ingredients together in a bowl with a fork or a whisk.
Add the eggs, oil and honey to a liquid measuring cup and whisk with a fork to combine.
Pour the liquid ingredients into the dry ingredients and add the shredded carrots and any chopped nuts or dried fruit.
Combine everything together and drop by the tablespoon onto a parchment-lined baking sheet. Bake for 16-18 minutes at 350 degrees Fahrenheit.
