  • 10-12 medium sized potatoes, washed and chopped into 1-inch pieces (skins on or peeled, your choice!)
  • 1 1/2 cups chicken stock
  • 5 cloves garlic, finely minced
  • salt and pepper, to taste
  • 1/3 cup butter
  • 1/2 cup warm milk
  • 1/2 cup Greek yogurt or sour cream
  • 1/2 teaspoon smoked paprika
  • 1 tablespoon fresh chopped parsley

  • Add the potatoes, chicken stock, garlic, salt and pepper, and butter to your slow cooker and stir to combine.
  • Cook on high for 3 to 3 1/2 hours or on low for 5-6 hours, or until the potatoes are tender.
  • Mash the potatoes well.
  • Add the warm milk, the sour cream or Greek yogurt, paprika and parsley.
  • Continue mashing until everything is incorporated and the mashed potatoes are smooth.
  • Add a little more fresh parsley for garnish, and salt and pepper to taste.

Feel free to remove the skins from the potatoes if you prefer, but leaving the skins on creates a beautiful rustic texture and adds flavour.
