Ingredients

  • 1 green pepper
  • 1 1/2 cups grape tomatoes
  • 1 long English cucumber
  • 1/2 small red onion
  • 1/3 cup feta cheese crumbled (I sometimes use reduced-fat feta, but the authentic sheep's feta is the best!)
  • 1/4 cup Kalamata olives
  • 2 tbsp red wine vinegar
  • 2 tbsp olive oil
  • 1 tsp dried basil
  • 1 tsp Greek oregano

Instructions

  • Wash and chop the green pepper and cucumber into bite-sized pieces at add them to a large bowl. Slice the red onion and add that too, along with the grape tomatoes.
  • Add the red wine vinegar, olive oil, basil and oregano to the bowl with the veggies. Toss everything together very well.
  • Add the crumbled feta cheese, and toss to combine. Sprinkle the Kalamata olives over the top, and you're done!
