Ingredients

  • 2 large sweet potatoes cut into 1.5 inch chunks, skins on
  • 4 tablespoons olive oil
  • 2 tablespoons liquid honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 teaspoons dried chili flakes use less to make it less spicy
  • 1 1/2 teaspoons smoked paprika
  • 1 1/2 teaspoons garlic powder

Instructions

  • Preheat your oven to 400 degrees Fahrenheit.
  • Add the chunks of sweet potato onto a standard baking sheet and drizzle to olive oil and honey over them.
  • Sprinkle over the salt, pepper, chili flakes, paprika, and garlic powder and toss everything well to coat. Arrange the chunks of sweet potato in an even layer on the baking sheet.
  • Place the sheet pan in the oven and bake for 15-17 minutes or until the sweet potatoes are crispy on the outside and fork tender.
  • Serve immediately.

Notes

This recipe is great for meal prep - simply prepare as directed and store in an airtight container in the fridge for up to 3 days.
