Ingredients

  • 4 cups watermelon chopped in 1-inch pieces, or use a melon baller to create 1-inch balls
  • 1 long English cucumber sliced
  • 1/3 cup feta cheese crumbled
  • 1 tablespoon olive oil
  • juice of one lime
  • 2 tablespoons chopped mint leaves

Instructions

  • Add the watermelon to a bowl along with the cucumber slices and feta.
  • Add the lemon juice and olive oil and toss gently.
  • Add the mint leaves and serve.
