Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius) and line 2 large baking sheets with parchment paper.
Add all the ingredients to a bowl and mix well with a wooden spoon, spatula, or your hands until well blended. Because different sized eggs contain more or less moisture, feel free to add another small egg or another 1-2 tablespoons of breadcrumbs to achieve the correct texture (until the mixture sticks together, but isn't too sticky or wet).
Portion out the mixture using an ice cream scoop or your hands so you have about 12 or 14 equally-sized fritters (form them like a hamburger patty).
Place the fritters on the prepared baking sheets and bake for about 20-25 minutes or until the tops are golden brown and the fritters are cooked through.
Remove from the baking sheet and serve immediately with a dollop of tzatziki sauce.
