Add the juice of 5 lemons, honey, and raspberries, along with 1 cup of the water to a blender and blend on high speed until smooth.
Strain the mixture into a pitcher to remove the foam and raspberry seeds, then add the remaining 3-4 cups of water (to taste) to the raspberry mixture.
Add ice, fresh raspberries, lemon slices, and mint leaves (if desired) for garnish.
Serve in mason jars or tall glasses with paper straws and a slice of lemon.
Notes
If desired, rim the glasses with sugar by dipping the rims of the empty glasses in some water and then 1-2 tablespoons of sugar. Fill the glasses with the lemonade after they've been rimmed with the sugar.
Make-Ahead Instructions
Feel free to make the lemonade mixture in the blender up to 24 hours ahead of serving. Store it in the fridge and when ready to serve, simply shake well and assemble the lemonade.
