Ingredients

  • 2 tablespoons olive oil
  • 2 tablespoons low sodium fajita or taco seasoning
  • 1 teaspoon cumin
  • 1 lime juice and zest
  • 4 chicken breasts cut into thin strips
  • 1 large red onion (or 2 small) thinly sliced
  • 3 bell peppers red, green, yellow or orange, thinly sliced
  • flour or corn tortillas, shredded cheese, sour cream, lettuce, avocado, tomatoes green onions, and/or salsa for serving

Instructions

  • Preheat your oven to 375°F (190°C) and add the olive oil to a large sheet pan. You can also line the sheet pan with parchment paper for easy clean up.
  • Add the chicken breast strips, the sliced onions and peppers, lime juice and zest, cumin, and the fajita seasoning to the sheet pan and toss everything together well.
  • Bake at 375°F (190°C) for 22 minutes or until the chicken is fully cooked through to 165°F (74° C).
  • Serve in warm tortillas with fresh tomatoes, lettuce, sour cream, shredded cheese, green onions, salsa, or any of your other favourite toppings.

Reheating Instructions

Reheat leftovers in a skillet on the stove with a splash of water until heated through, in the microwave, or on a sheet pan in the oven.
