I’m sure I’ve made this for my family hundreds of times and they aren’t sick of it yet (at least they haven’t told me so)! It’s the perfect recipe to make ahead of time, or to throw together when you walk in the door after work at 5:30 and you want to have dinner on the table by 6. Simply throw the chicken and vegetables into the oven and while they’re baking you can prepare all the fixings according to what your family enjoys. This recipe is easy, it’s crazy delicious, and it leaves lots of room for you to customize it to your family’s tastes or dietary needs. I’ve mentioned before that my husband as an intolerance to dairy, so I love meals like this one that can be made differently for every member of the family but that don’t require me to make 4 different meals. The kids and I pile on the cheese and sour cream and my husband opts for extra fajita filling, extra fresh veggies and a ton of salsa. I should also mention that this is a great recipe for healthy eating! I often serve these Easy Oven Baked Chicken Fajitas on whole grain tortillas (use corn tortillas if you’re gluten-free!) and if you skip the full fat sour cream and cheese and opt for fat-free salsa this is an incredibly heart-healthy recipe that easily fulfills several of your required servings of vegetables for the day! Since we made the move overseas Mexican food is even harder to come by than ever before, so making these Easy Oven Baked Chicken Fajitas at home is absolutely a necessity for us. The only trouble is that salsa in a jar isn’t as readily available here as it is in North America, and if you CAN find it there’s a good chance it contains a ton of ketchup (don’t ask…Eastern Europeans love their ketchup!) which we have found out the hard way a few times. Seriously…there’s quite nothing like biting into a delicious fajita or burrito and tasting ketchup. But I don’t easily accept defeat when it comes to the kitchen so I’ve been doing lots of experimenting with homemade blender salsa that I’ve been serving whenever I make these Easy Oven Baked Chicken Fajitas. Easy Oven Baked Chicken Fajitas
These Easy Oven Baked Chicken Fajitas are the perfect healthy meal for busy days! On the table in 30 minutes!

Servings: 6 servings
Calories: 191kcal
Ingredients
- 2 tablespoons olive oil
- 2 tablespoons low sodium fajita or taco seasoning
- 3 large chicken breasts cut into strips
- 1 medium red onion thinly sliced
- 2 bell peppers red, green, yellow or orange, thinly sliced
- flour or corn tortillas, shredded cheese, sour cream, lettuce, tomatoes green onions, and/or salsa for serving
Instructions
- Preheat your oven to 375 degrees Fahrenheit and add the olive oil to a large rectangular baking dish.
- Add the chicken breast strips, the sliced onions and peppers, and the fajita seasoning to the baking dish and toss everything together well.
- Bake at 375 degrees Fahrenheit for 22-25 minutes or until the chicken is fully cooked.
- Serve in warm tortillas with fresh tomatoes, lettuce, sour cream, shredded cheese, green onions, salsa, or whatever else your heart desires!
