Greek Style Smash Tacos

These Greek Smash Tacos are a quick and easy dinner made with ground chicken smashed onto tortillas, simple Greek salad, feta and tzatziki. They're fresh, healthy, ready in just 25 minutes and perfect for busy weeknights!

For the fixings:

For the tacos:

  • Add the ground chicken to a bowl with the salt, pepper, garlic powder, basil, and oregano. Stir or mix with your hands until the spices are distributed throughout the ground chicken.
  • Split the ground chicken in 4 equally-sized balls.
  • Smash them on top of the 4 tortillas, trying to get as close to the edge as possible. The meat will shrink as it cooks so this step is important.
  • To a large skillet over medium high heat, add a spray of oil.
  • Once hot, add the tacos, meat side down and fry for 1-2 minutes until browned. Flip and cook for 1-2 minutes longer, until the tortilla starts to brown.

For serving the tacos:

  • Add one cup of the Greek salad onto each of the 4 tacos, meat side up. Top with the tzatziki and serve immediately.
  • Alternatively, chop the veggies for the Greek salad and leave them separate, allowing each person to add the veggies they like. Top with feta and tzatziki as desired.

Notes

Storage Instructions

Store any leftover tacos in an airtight container in the fridge for up to 3 days. Warm up in the microwave or a skillet, add the salad, and enjoy.
