They cook quickly in one skillet and come together in just a few minutes, which makes them ideal for busy weeknights when your family wants something that’s easy, fast, fun, and different.
Smash tacos have become popular because they’re so incredibly quick and easy to make. Instead of cooking the filling separately, the seasoned meat is pressed directly onto the tortilla and cooked in a hot pan. For the salad:
- Prepare the Caesar Salad according to the recipe directions found here, OR make your own Caesar Salad with romaine lettuce, croutons, parmesan cheese, and a bottle of dressing from the supermarket.
For the tacos:
- Add the ground chicken to a bowl with the salt, pepper, and garlic powder. Stir or mix with your hands until the spices are distributed throughout the ground chicken.
- Split the ground chicken in 4 equally sized balls.
- Smash them on top of the 4 tortillas, trying to get as close to the edge as possible. The meat will shrink as it cooks so this step is important.
- In a large skillet over medium high heat, add a spray of oil.
- Once hot, add the tacos, meat side down and fry for 1-2 minutes until browned. Flip and cook for 1-2 minutes longer, until the tortilla starts to brown.
For serving the tacos:
- Add one cup of the Caesar salad onto each of the 4 tacos, meat side up.
- Add the cooked crumbled bacon on top of each taco.
- Serve immediately.
