I’ve mentioned before that my husband and I spent 8 weeks during the summer of 2010 in Europe and we spent 4 of those weeks in Greece. It was pretty much the best summer ever (that’s an understatement) and it had a huge influence on my culinary style. Since the Mediterranean countries are known for their fresh, healthy diets, one of the things we got used to eating was Greek salad; we ate it two, three or even four times a day. And can you blame us??
We ate it in big cities, small towns, tourist traps, off the beaten-path, and even on a sailboat. Now, it’s one of the things I make most often at home. This easy Greek salad recipe is so healthy and it’s simple and easy to prepare in under 5 minutes.
Yes, that’s right. I said 5 minutes. And if I can do it in 5 minutes, so can you, because my chopping skills are horrendous. Seriously, they’re so bad I can almost hearing Gordon Ramsay yelling at me every time I reach for my chef’s knife…it’s not pretty.
I love preparing this salad with cherry tomatoes to save some time chopping, and the dressing ingredients are just added straight to the bowl with the salad. Once everything is tossed well you’ll be in Greek salad heaven, I promise!

Quick and Easy Greek Salad Recipe
Greek Salad Recipe Ingredients:
- 1 green pepper
- 1 1/2 cups grape tomatoes
- 1 long English cucumber
- 1/2 small red onion
- 1/3 cup feta cheese, crumbled (I sometimes use reduced-fat feta, but the authentic sheep’s feta is the best!)
- 1/4 cup Kalamata olives
- 2 tbsp red wine vinegar
- 2 tbsp olive oil
- 1 tsp dried basil
- 1 tsp Greek oregano
To make: Wash and chop the green pepper and cucumber into bite-sized pieces at add them to a large bowl. Slice the red onion and add that too, along with the grape tomatoes. Add the red wine vinegar, olive oil, basil and oregano to the bowl with the veggies. Toss everything together very well. Add the crumbled feta cheese, and toss to combine. Sprinkle the Kalamata olives over the top, and you’re done!
That’s it! This easy Greek salad recipe is really as easy as that, and takes under 5 minutes to throw together a gorgeous, fresh, colourful salad! Because this salad is so quick and easy to prepare, I make it at least once a week for lunch with some grilled chicken on the side or for dinner alongside pasta dishes, grilled meats, fish – anything, really!
