It’s no secret that our family loves Mexican food. Scratch that…I should have said that our family loves homemade Mexican food. None of those taquitos or anything Taco Bell for us. Being from Canada, it was always hard to find good quality Mexican food and we often enjoyed finding tasty Mexican restaurants whenever we spent time in the United States or Mexico. And now that we’ve moved to Europe good Mexican food in a restaurant is even more difficult to find. And by difficult I mean impossible. So now it’s my responsibility to satisfy our Mexican food cravings at home; a challenge I willingly accept! Now, to be clear, I am in no way an authority on authentic Mexican cuisine…I’ve visited northern Mexico and enjoyed the authentic food SO much, and I’ve had the opportunity to visit several Mexican restaurants in the US that served some of the most delicious food I’ve ever had. I’ve also done a lot of traveling in my 33 (almost 34, but who’s counting?) years and experienced some truly amazing local cuisine and some that was equally awful (food poisoning, anyone?). And while I’m no expert on re-creating the cuisine of any culture, I’d like to think that I do a pretty good job of keeping within the spirit of the cultural recipes I try as much as possible in my Canadian kitchen and for my Canadian family. As authentic or inauthentic as you may think this Easy Homemade Mexican Enchilada Sauce is, there’s no denying that it’s a tasty addition to anything Mexican-inspired, which is why we love it! My favourite way to use this Easy Homemade Mexican Enchilada Sauce is in my recipe for Sweet Potato Black Bean Enchiladas, which I plan to share with you on the blog VERY soon! They’re a staple in our monthly meal plan because they’re a family meal that’s both healthy and fairly inexpensive to make, and this Easy Homemade Enchilada Sauce suits them perfectly. I’ve been making this Easy Homemade Mexican Enchilada Sauce for several years and I’ve adapted it from Gimme Some Oven, changing a few of the main ingredients to create a sweeter, more robust flavour that suits our family’s tastes. The addition of smoked paprika adds a delicious smokiness without any added heat and adding some tomato paste (and even some roasted red pepper paste if you can get your hands on it) does wonders for this sauce! Any enchilada sauce from a can will just never compare to anything you can make yourself and so I always keep a batch or two of this Easy Homemade Enchilada Sauce on hand in the freezer for those nights when we need a quick and easy dinner. And feel free to play around with the level of spiciness in this recipe…I have two little ones who enjoy flavourful food but if anything’s too spicy they won’t eat it, so I’ve toned down the heat quite a bit in this recipe. Feel free to add a little bit more chili powder or a pinch or cayenne if you’re after some extra heat!

Easy Homemade Enchilada Sauce
This Easy Homemade Enchilada Sauce is easy to make with basic pantry staples and it compliments a variety of Mexican dishes!

Recipe: Ingredients
- 3 tablespoons vegetable oil
- 3 tablespoons all purpose flour
- 3 tablespoons chili powder not spicy
- 2 tablespoons smoked paprika
- 3/4 teaspoons salt
- 3/4 teaspoons cumin
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- 2 tablespoons tomato paste
- 1 teaspoon roasted red pepper paste optional
- 3 cups chicken or vegetable stock
Recipe: Instructions
- Heat a large skillet over medium heat.
- Add the oil to the skillet and once it's heated sprinkle the flour into the oil and whisk to combine.
- Continue whisking as the flour toasts over the heat and add the chili powder, paprika, salt, cumin, oregano, garlic powder, and the tomato and red pepper pastes (feel free to leave out the red pepper paste), whisking to combine.
- Continue whisking for another minute or so, until the spices become fragrant.
- Slowly pour in the broth, a tablespoon at a time at the beginning, just to be sure the mixture doesn't develop any lumps.
- Once the broth has been added continue to whisk every minute or so, letting the sauce cook over the heat for about 7 more minutes to reduce.
- Once the sauce has reduced, use it immediately in any of your favourite Mexican recipes or add it to a freezer-safe container for long-term storage.
