The weather is pretty dreary here today and so this Ginger Pear Crisp is exactly what I’m in the mood for. Fruit crisp is a perfect dessert option to satisfy a sweet tooth without completely compromising your healthy eating habits. It’s the perfect comfort food!
This recipe brings together the mild freshness of pears, warm and pungent ginger, and a crisp and fragrant oat topping to create a unique blend of flavours and textures that will have you making it again and again!

I’ve adapted this recipe from the Simply Delicious: 245 No-Fuss Recipes–All 8 POINTS or Less
cookbook.
You’ll need:
For the filling:
4 ripe pears
1/4 cup light brown sugar
1 tbsp all-purpose flour
2 tsp cinnamon
1/2 tsp vanilla extract
1 tbsp fresh grated ginger
For the topping:
1/4 cup light brown sugar
3 tablespoons all-purpose flour
1/2 cup large flake oats
1 tsp cinnamon
1 tsp fresh grated ginger
3 tbsp coconut oil, melted (margarine or butter work fine too!)
1 tsp coconut oil for greasing the baking dish
To make:
Preheat the oven to 375 degrees Fahrenheit and grease a small (8×8 or similar) baking dish with 1 tsp coconut oil.
Core the pears and chop them into bite-sized pieces. I like to leave the skin on for the added fibre and texture, but if you prefer them peeled then feel free to peel them.
Add the pears to a bowl with the 1/4 cup light brown sugar, 1 tbsp flour, 2 tsp cinnamon, 1/2 tsp vanilla, and 1 tbsp grated fresh ginger.
I keep fresh ginger in the freezer and grate it while it’s frozen using a microplane zester. It grates much more easily this way. Here’s a link to the Microplane Stainless Steel Zester

Toss everything together well and add it to the greased baking dish.
In a separate bowl, add the 1/4 cup brown sugar, 3 tablespoons flour, 1/2 cup oats, 1 tsp cinnamon, 1 tsp fresh grated ginger, and the melted coconut oil.
Using a fork, stir the ingredients together until the mixture becomes the texture of coarse crumbs. Pour the topping evenly over the pears and spread it as evenly as possible. It’s okay if there are a few pieces of pear peeking through here and there.
Bake it uncovered at 375 degrees Fahrenheit for about 45 minutes, or until the topping turns a crispy golden brown.
It’s best to serve this crisp warm from the oven. You can add a scoop of coconut cream or ice cream if you want, but it tastes amazing all on its own!
