One Pot Pasta Recipes
I’ve recently become a lover of one-pot meals. I know, I’ve been a parent for almost 4 years and a busy professional for many years before that, and I’m only just now going to great lengths to conserve time (and dishes) when it comes to making dinner. It seems the older my kids get, the busier my days are and the more often it happens that I see my husband walking through the door after work and I haven’t given our dinner any thought at all. Of course, there are still many days when I manage to make a nice slow-cooker meal, or roast a chicken with some vegetables, or even make a nice healthy soup. But on the other days? I’m looking for something that’s reasonably healthy and well-rounded that I can have on the table in 30 minutes or less to feed my hungry family!
And while the temptation on those crazy days might be to order a pizza for delivery, this One-Pot Pepperoni Mushroom Pizza Pasta recipe is definitely a better choice than that! It’s made from ingredients you probably already have in your kitchen, it tastes just like your favourite pizza delivery (but it’s a whole lot healthier!), and you only have to wash one pot. So put away the take-out menu and save yourself some money (and time!) with this pizza pasta recipe. It’s a family favourite at our house, and my kids go crazy for it. I know yours will too!

One-Pot Pepperoni Mushroom Pizza Pasta
Recipe: Ingredients
- 450 g Rotini pasta
- 4 cups vegetable broth
- 398 ml pizza sauce I use a low-sodium, low- fat variety
- 2 cups sliced mushrooms
- 2 green bell peppers cut into chunks
- 5 mild pepperoni sticks thinly sliced
- 1 1/2 cups shredded mozzarella cheese
- Chopped cilantro or parsley for garnish optional
Recipe: Instructions
- Add the pasta, the broth and about half the pizza sauce to a large skillet or saucepan over high heat and bring to a boil.
- Once the liquid begins to boil turn the heat to medium low and let the pasta cook, uncovered, until it's al dente and much of the liquid has been absorbed, about 10 minutes.
- At this point, add the sliced mushrooms, green bell pepper chunks, sliced pepperoni, the shredded cheese, and the remainder of the pizza sauce. Stir everything together well and let the pasta absorb the last little bit of liquid while the peppers and mushrooms soften slightly and the cheese melts into the sauce.
- Serve immediately and enjoy!
