Whew! What a weekend! My husband and I haven’t had a night away from the kids for 16 months (not that I was keeping track or anything) so we shipped them off to Grandma and Grandpa’s for a sleepover and we had a much-needed staycation! It was awesome. We slept in, we went out for breakfast to The Tallest Poppy (a hip little diner in West Broadway…we stood out like a sore thumb), we shopped, we strolled, and we talked without interruption. We got all dressed up and went out for a fancy-schmancy dinner at Hy’s (a high-end steakhouse in Canada) and ate fresh oysters and filet mignon cooked in gobs of butter. And then we came home, changed into shorts and flip-flops (much more our style), went to a late movie, and ate a bucket of movie theatre popcorn drenched in butter, inhaled a bag of gummy candy, and drank diet coke (I know. That stuff is terrible. Please don’t judge me).
We had so much fun and enjoyed every quiet moment, but we’re both feeling the need to get back to our regular healthy eating habits after a weekend of treats. So this morning I’m hitting the ‘reset’ button and enjoying this Green Apple Spinach Smoothie for breakfast! It’s green, it’s healthy and it’s the perfect breakfast to start the week off on a healthy note!
2 Granny Smith apples (cored and cut into chunks)
a large handful of fresh spinach
1/3 cup plain Greek yogurt (optional)
1 cup cold water or the liquid of your choice (apple juice, milk, almond milk, soy milk, etc.)
Core the apples and cut them into chunks. Grab and handful of spinach and peel a banana.
Throw everything in the blender and add the yogurt (if you’re using it) and the cold water, juice, or milk of your choice. I use a combination of plain Greek yogurt and cold water because I’m trying to keep my intake of fat and sugar to a minimum. If you’re not concerned about that or you have other dietary restrictions (vegan, dairy-free, etc.) feel free to use 1 cup of the liquid of your choice and skip the Greek yogurt.
Blend for 3-4 minutes or until smooth, and serve!
The sweetness of the banana balances out the tartness of the apples and the bitterness of the spinach. This is not a super sweet, fruity smoothie but it’s got a lovely smooth flavour and it’ll keep you satisfied until it’s time for lunch!
