I don’t know about your family, but we have been struggling off an on with colds for what seems like the whole winter season! I guess that’s what we get for having kids in school, and although I know their immunity will build as they get older it’s certainly not enjoyable to be dealing with colds and sickness as much as we have! Thankfully, this Crock Pot Lemon Ginger Chicken Soup has been in our slow cooker on the regular this winter, bringing us much needed comfort and nutrition!
One of the best things about this soup is that it can be made on the stovetop OR in the slow cooker! And make it with pre-cooked chicken if you want (I keep leftover grilled chicken breasts in my freezer just for this purpose!), or start with fresh chicken if you prefer making soup truly from scratch. It’s up to you!
The lemon and ginger added to this delicious Crock Pot Lemon Ginger Chicken Soup are what take it over the top and make it the perfect soup for cold and flu season. Crock Pot Lemon Ginger Chicken Soup

- 12 cups low sodium chicken stock (3 liters)
- 1 tablespoon tomato paste
- 1 large onion diced
- 2 large carrots chopped or sliced
- 4 stalks celery chopped
- 1 lemon (juice and zest only)
- 1 or 2 teaspoons freshly grated ginger
- 1/2 teaspoon Sriracha hot sauce
- 2 chicken breasts cooked and shredded
- 4 cups fresh spinach
- salt and pepper to taste
- fresh parsley and lemon slices for serving
Recipe: Instructions
Slow Cooker Instructions:
- Add the chicken stock, tomato paste, onions, carrots, celery, lemon juice and zest, grated ginger, sriracha and salt and pepper to your Slow Cooker or Crock Pot. Stir to combine.
- Add the cooked shredded chicken and stir well.
- Add the lid and cook on high for 3-4 hours or on low for 5-6 hours.
- Just before serving, add the fresh spinach and let it wilt in the soup.
- Serve with a sprinkling of fresh parsley and lemon slices.
Stove Top Instructions:
- Slice the chicken breasts into small slices and season them with salt and pepper. Cook the chicken breasts in the bottom of a large stock pot in one tablespoon of olive oil until cooked through. Add the onions, carrots, celery, lemon juice and zest, grated ginger, sriracha and salt and pepper to the chicken and continue to saute over medium heat, shredding the chicken as the vegetables release their juices.
- Once the onions are translucent and the other veggies have softened slightly, add the tomato paste and chicken stock.
- Stir everything together well and place the lid on the pot. Cook over medium low heat for at least 1 hour, stirring regularly and further shredding the chicken pieces as the soup cooks.
- Add the spinach to the pot just before serving, letting the spinach wilt in the soup.
- Serve with a sprinkling of fresh parsley and lemon slices.

Can you put raw chicken into the crockpot rather than cooking in advance?
Yes you can! Just be sure to cut it into thinner pieces and cook the soup long enough so that the chicken cooks through. When it’s cooked, remove the chicken pieces to a plate and shred them, then add them back into the soup. 🙂

We loved this! My husband has a cold so I went searching for a healthy chicken soup. I’m so happy I came across this. I cooked some whole grain pennette near the end and mixed it in to give it a bit more body. Absolutely delicious. We will definitely be making this again sometime.

I found this soup super sour and vegetal until I added a substantial amount of olive oil to the leftovers. Soup should be salty and oily for my taste, and this was very weird and thin in my opinion. Good base, though!

Yes! This soup freezes well, and if you can freeze it without the spinach it’s even better!
