Cucumbers are one of my favourite vegetables – they’re so fresh and flavourful, and they make the BEST summer salads, like this Creamy Cucumber Salad! It’s perfect for picnics and barbecues, and it’s my number one choice for a fresh summer side dish alongside grilled chicken.
How to Make Creamy Cucumber Salad
Cucumber salad is always a family favourite, especially in the summertime, and it’s so easy to make! The one kitchen tool you’ll need is a mandoline slicer. My favourite mandoline is the OXO Good Grips Mandoline slicer – it slices thinly and evenly and it’s easy to use. Simply slice the cucumbers and onions on your mandoline slicer, mix together the dressing ingredients, toss everything together with some fresh dill, and serve!

To make this creamy cucumber salad, you’l need:
- Long English cucumbers
- Red onion
- Mayonnaise (or vegan mayonnaise)
- Honey or Agave nectar
- Rice vinegar
- Fresh dill
- Salt and pepper

Easy Creamy Cucumber Salad

- 2 long English cucumbers
- 1 medium red onion
- 1/3 cup low fat mayonnaise (use vegan mayonnaise, if desired)
- 3 tablespoons rice vinegar
- salt and pepper to taste
- 1 tablespoon honey (use agave nectar, if desired)
- 2 tablespoons chopped fresh dill
Recipe: Instructions
- Slice the cucumbers and the red onion on a mandoline slicer to create thin, even slices.
- Add the sliced cucumbers and red onion to a medium bowl and set aside.
- In a small bowl, whisk together the mayonnaise, rice vinegar, honey, and salt and pepper.
- Pour the mayonnaise mixture over the cucumbers and toss well to coat.
- Sprinkle the fresh dill on top, toss slightly, and serve.
